Tiramisu Parfait

Tiramisu was a beloved dessert in the eighties. But it's very popularity spelled its fall from favour. (It got the kiss of death with it became available frozen at the supermarket). But I always liked it and have developed this simple recipe that gives you the flavour but does not involve any much time.

¼ cup coffee
¼ cup sugar
½ teaspoon grated orange rind
2 tablespoons orange juice
2 cups (100 g) ladyfingers
1 cup mascarpone
½ cup whipping cream
¼ cup Marsala
Garnish:
¼ cup grated chocolate
½ cup whipping cream, whipped to soft peaks
Combine coffee, 1 tablespoon sugar, orange rind and juice. Crumble ladyfingers into a bowl and drizzle with coffee mixture to moisten.
Combine mascarpone, remaining 3 tablespoons sugar, ½ cup whipping cream and Marsala. Stir until uniform.
Divide soaked ladyfingers into 4 portions. Using a wine glass or parfait glasses, make a layer of half a portion of ladyfingers. Drizzle about 2 tablespoons mascarpone cream onto the ladyfingers, and top with about 1 tablespoon whipped cream. Repeat layers finishing with a dab of whipped cream. Sprinkle with shaved chocolate. Repeat with 3 other glasses. Chill until needed.
