Halibut with a Spanish Flair

Paella is one of my favourite main course dishes. With a little rejigging, it can also make a brilliant side dish. For dinner, try my Halibut with Paella - the brightness of the Spanish saffron contrasts beautifully with the pale subtlety of the white fish. Although this is not a Spanish menu, per se, I have included two Spanish-influenced salads to go with it: Arugula with Roasted Figs and Burrata and a Shaved Radish Salad. To end, Earl Grey White Chocolate Mousse is a delightfully rich dessert and should be served in very small quantities.
