This green herb mayonnaise is a zesty companion to a Classic Poached Salmon.
- 2 tablespoons chopped basil
- 2 tablespoons chopped mint
- 2 tablespoons chopped Italian parsley
- ¼ cup chopped green onions
- 2 cups arugula leaves
- 1 tablespoon lemon juice
- 1 cup mayonnaise
- 1 teaspoon Thai green curry paste
Add all ingredients into food processor and process until combined and a little texture remains. Season with salt and pepper.
