- 3 tablespoons duck fat or oil
- 1 pound (500 grams) Yukon Gold potatoes, peeled and diced into ½ -inch (1 cm) dice
- Salt and freshly ground pepper to taste
- 2 tablespoons parsley, chopped
Heat fat in a skillet over medium heat.
Add potatoes in a single layer, season well with salt and pepper and toss them in the fat. Continue sautéeing for 2 minutes. Turn heat to low and cook, tossing potatoes occasionally, until they are browned and cooked through – about 10 minutes.
Garnish with parsley.
