Lemon Cream with Blueberries


  • 1 cup whipping cream

  • ¼ cup butter

  • ½ cup sugar

  • 1 tsp grated lemon rind

  • ¼ cup lemon juice


Combine cream, sugar and butter in small pot and bring to boil, stirring occasionally. Reduce heat and simmer for 3 minutes. Stir in lemon rind and juice.

Pour mixture into 4 1-cup ramekins and chill until set. Top with blue berries just before serving. Serves 4.
