Zucchini should be plentiful in gardens right now. Make sure you use smaller, tender ones.
- 8 small zucchini
- 2 tablespoons olive oil
- 1 tablespoon grated lemon rind
- Salt and freshly ground pepper
Cut zucchini in half lengthwise. Combine olive oil and lemon rind and brush over zucchini. Season with salt and pepper. Grill over high heat for about 3 minutes a side or until grill-marked and tender. Serves 4.
