- 12 radishes, preferably white
- ½ English cucumber
- 4 green onions
- 3 tablespoons lemon juice
- 2 tablespoons olive oil
- 2 tablespoons chopped parsley
- Salt and freshly ground pepper
Shave radishes and cucumber horizontally with a vegetable peeler or mandolin. Cut green onions on the bias. Sprinkle with lemon juice and olive oil. Sprinkle with parsley and season with salt and pepper.
