The perfect veggie sandwich for summer.
- 2 baguettes
- 1/2 cup pesto, homemade or store-bought
- 2 250 g packages of buffalo mozzarella, sliced
- 6 ripe tomatoes, sliced
- 1/2 Vidalia onion, thinly sliced or more to taste
- Salt and freshly ground pepper
- 8 Boston lettuce leaves
Slice baguettes length wise. Brush each side with pesto.
Layer cheese, tomatoes and onions, finishing with salt and pepper.
Top with lettuce. Cut each baguette into 4.
