Mozzarella, Tomatoes and Onion Sandwiches with Pesto

The perfect veggie sandwich for summer.

  • 2 baguettes
  • 1/2 cup pesto, homemade or store-bought
  • 2 250 g packages of buffalo mozzarella, sliced
  • 6 ripe tomatoes, sliced
  • 1/2 Vidalia onion, thinly sliced or more to taste
  • Salt and freshly ground pepper
  • 8 Boston lettuce leaves


Slice baguettes length wise. Brush each side with pesto.

Layer cheese, tomatoes and onions, finishing with salt and pepper.

Top with lettuce. Cut each baguette into 4.
