For the poached plum parfait, thinner-skinned plums such as the yellow ones are excellent if they are at hand, but the local blue prune plums that abound in many parts of Canada at this time of year are equally as good. The plum syrup that enriches this parfait recipe can keep for a month refrigerated.

If you do not have a mill that grinds spices coarsely, place them in a plastic bag and smash them with the bottom of a heavy pot. If plums are no longer available, soak 6 prunes, cut them up, omit the sugar and substitute for the plums.

If you cannot find the small blue or prune plums, then use apples. I have been disappointed in the prune plums this year, which are large and very sour. The small ones have been much better.
